Start by peeling and chopping the baking apples into small pieces. Set them aside once done.
In a mixing bowl, combine light brown sugar, ground cinnamon, and ground ginger.
In another bowl, whisk together one large egg, white granulated sugar, vegetable oil, full-fat sour cream, and vanilla extract until smooth.
In yet another bowl, sift together all-purpose flour, baking soda, and kosher salt.
Gradually add the dry ingredient mixture to the wet ingredients while stirring gently.
Gently fold in your chopped apples along with half of the cinnamon-sugar mix from earlier.
Pour your batter into a greased loaf pan and sprinkle any remaining cinnamon-sugar mixture on top. Bake at 350°F (175°C) for about 55 minutes or until golden brown.
Prepare the glaze by whisking together sifted powdered sugar, vanilla extract, and milk until smooth.
Once cooled slightly but still warm, drizzle the glaze over your loaf generously. Let it set before slicing.
