Ingredients

  • 2 pints cherry or grape tomatoes
  • 1 medium zucchini cut into slices
  • 1/2 medium sweet onion diced
  • 4 cloves garlic
  • 1/2 cup olive oil
  • 1/2 tablespoon garlic powder
  • 1/4 tablespoon crushed red pepper flakes
  • Kosher salt to taste
  • freshly ground black pepper to taste
  • 1 block feta cheese drained
  • 1 pound pasta
  • 1/4 cup fresh basil
  • 1/4 cup parmesan cheese grated

Method

  1. Preheat your oven to 400°F (200°C) and gather all your ingredients.
  2. In a large baking dish, combine cherry tomatoes, zucchini slices, diced onion, garlic cloves, olive oil, garlic powder, crushed red pepper flakes, salt, and pepper. Place the block of feta cheese in the center. Bake for about 30 minutes until the tomatoes burst and the feta becomes golden brown.
  3. While your vegetables are roasting, bring a large pot of salted water to boil. Add your pasta and cook according to package instructions until al dente.
  4. Once both the roasted vegetable mixture and pasta are done cooking, combine them in a large bowl while gently breaking apart the roasted feta with a fork. Toss everything together until well mixed.
  5. Stir in fresh basil and sprinkle grated parmesan on top before serving. Serve immediately while it’s still warm.
