Ingredients

Chicken and Seasoning
  • 4 pieces boneless, skinless chicken breasts pounded to even thickness
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons olive oil for cooking
Sauce Ingredients
  • 1 cup Riesling wine or any dry white wine
  • 1 cup heavy cream for richness
  • 8 ounces mushrooms sliced
  • 2 cloves garlic minced
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
  • 1 teaspoon fresh parsley chopped, for garnish

Method

Prepare the Chicken
  1. Season the chicken breasts with salt and black pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
Make the Sauce
  1. In the same skillet, add the sliced mushrooms and cook until they are browned, about 5 minutes.
  2. Add minced garlic and thyme, cooking for an additional minute until fragrant.
  3. Pour in the Riesling wine, scraping up any brown bits from the bottom of the skillet.
  4. Let the wine simmer for about 5 minutes until reduced by half.
  5. Stir in the heavy cream and return the chicken to the skillet.
  6. Simmer for another 5-10 minutes until the sauce thickens and the chicken is heated through.
Serve
  1. Garnish with fresh parsley and serve hot over rice or pasta.
