Ingredients

Sausage Bites
  • 1 lb Italian sausage sliced into bite-sized pieces
  • 4 cloves garlic minced
  • 4 tbsp butter unsalted
  • 1 tbsp olive oil
Creamy Parmesan Pasta
  • 8 oz fettuccine or pasta of choice
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/4 cup fresh parsley chopped, for garnish

Method

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and set aside, reserving 1/2 cup of pasta water.
Prepare the Sausage Bites
  1. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat.
  2. Add the sliced sausage and cook until browned and cooked through, about 8-10 minutes.
  3. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
Make the Creamy Sauce
  1. Reduce the heat to low and add the heavy cream to the skillet with the sausage. Stir to combine.
  2. Gradually add the grated Parmesan cheese, stirring until melted and smooth. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  3. Season with salt and black pepper to taste.
Combine and Serve
  1. Add the cooked fettuccine to the skillet and toss to coat in the creamy sauce.
  2. Serve hot, garnished with chopped parsley and additional Parmesan if desired.
