Meatballs
  • 1 pound ground beef or ground turkey
  • 1 cup bread crumbs preferably Italian seasoned
  • 1 large egg beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Rice and Sauce
  • 1 cup uncooked rice jasmine or basmati
  • 2 cups chicken broth or vegetable broth
  • 1/2 cup honey
  • 1/4 cup soy sauce low sodium preferred
  • 4 cloves garlic minced
  • 1 tablespoon cornstarch optional, for thickening
  • 1 tablespoon water for cornstarch slurry
Garnish
  • 2 tablespoons green onions sliced
  • 1 tablespoon sesame seeds

Method

Prepare the Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground beef, bread crumbs, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Form the mixture into small meatballs, about 1 inch in diameter, and place them on a baking sheet.
Bake the Meatballs
  1. Bake the meatballs in the preheated oven for 20 minutes or until cooked through.
Prepare the Rice and Sauce
  1. In a baking dish, combine uncooked rice and chicken broth.
  2. In a small saucepan, combine honey, soy sauce, and minced garlic. Bring to a simmer over medium heat.
  3. If using cornstarch, mix it with water to create a slurry and add to the sauce, stirring until thickened.
Combine and Bake
  1. Add the baked meatballs to the rice mixture and pour the honey garlic sauce over the top. Stir gently to combine.
  2. Cover the baking dish with foil and bake for an additional 25 minutes.
  3. Remove the foil and bake for another 10 minutes to allow the top to brown.
Serve
  1. Remove from the oven and let it cool for a few minutes. Garnish with sliced green onions and sesame seeds before serving.
