Ingredients

Pasta and Sausage
  • 12 oz penne pasta uncooked
  • 1 lb Italian sausage removed from casings
  • 1 tbsp olive oil for sautéing
Vegetables and Dairy
  • 4 cups fresh spinach washed and chopped
  • 2 cups chicken broth low sodium
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
Seasonings
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes optional

Method

Cook the Sausage
  1. In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.
Add Garlic and Seasonings
  1. Add minced garlic, Italian seasoning, and red pepper flakes to the skillet. Cook for 1-2 minutes until fragrant.
Cook the Pasta
  1. Stir in the penne pasta and chicken broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, or until the pasta is al dente.
Add Spinach and Cream
  1. Once the pasta is cooked, stir in the fresh spinach and heavy cream. Cook for an additional 2-3 minutes until the spinach is wilted and the sauce is creamy.
Finish and Serve
  1. Remove from heat and stir in the grated parmesan cheese. Season with salt and black pepper to taste. Serve warm.
