Ingredients

Pasta
  • 12 oz orecchiette
Mushroom Sauce
  • 2 tbsp olive oil for sautéing
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 8 oz cremini mushrooms sliced
  • 1 cup vegetable broth
  • 1 tbsp fresh thyme chopped
  • 1 tbsp soy sauce optional
  • 1/4 cup parmesan cheese grated, for serving

Method

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the orecchiette and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare the Mushroom Sauce
  1. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are browned and tender, about 7-10 minutes.
  3. Pour in the vegetable broth, add the thyme, and soy sauce if using. Simmer for 5 minutes to combine flavors.
  4. Season with salt and pepper to taste.
Combine and Serve
  1. Add the cooked orecchiette to the skillet with the mushroom sauce. Toss to combine, adding reserved pasta water as needed to achieve desired consistency.
  2. Serve hot, garnished with grated parmesan cheese.
