Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup red bell pepper diced
  • 1 cup cucumber diced
  • 1 cup carrot shredded
  • 1 cup red cabbage shredded
  • 1/2 cup green onions sliced
  • 1/4 cup cilantro chopped
Thai Dressing
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon peanut butter smooth
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or maple syrup for vegan
  • 1 clove garlic minced

  • 1 teaspoon red pepper flakes optional
Toppings
  • 1/4 cup peanuts chopped

Method

Cook Quinoa

Prepare Vegetables
  1. While quinoa is cooking, prepare the vegetables: dice the red bell pepper, cucumber, and shred the carrot and red cabbage. Slice the green onions and chop the cilantro.
Make Dressing
  1. In a small bowl, whisk together soy sauce, lime juice, peanut butter, sesame oil, honey, garlic, ginger, and red pepper flakes until smooth.
Combine Salad
  1. In a large bowl, combine cooked quinoa, diced vegetables, and chopped cilantro. Pour the dressing over the salad and toss to combine.
Serve
  1. Top the salad with chopped peanuts and sesame seeds before serving. Enjoy!
